Slimming World 1/2 Syn Raspberry Roulade
Indian is my favourite cuisine, and onion bhajis are quite the drool-fest aren't they? So when I sampled a syn free onion bhaji at class recently I was blown away. I decided that these were going to accompany my slimming world curries every time... Now, these take a bit of prep so I've somewhat given up on that dream, but they are definitely worth rustling up as a party food or when having a "fakeaway" night in. 12 Servings Prep Time: 10 Cook Time: 20 Min Ready In: 30 Min Ingredients * Frylight * 2 large onions, sliced * 2 eggs, beaten * 1 sweet potato, sliced * 1 tablespoon of curry powder * 1 tbsp turmeric * 1 tsp chilli flakes * Salt and pepper Directions 1. Slice the onions 2. Grate the sweet potato 3. Beat the eggs 4. In a bowl, mix the ingredients with the spices, salt and pepper 5. Spray a cake tray with frylight 6. Using your hands, mould the mix into balls and add to the cake tray 7. Bake for 20 minutes until golden brown, allow to cool and serve
